Vegetable Proteins

The discussion of meat proteins prompted me to break out my Laurel’s
Kitchen book and look up other sources of protein. These are the
things that interested me the most. Some like lettuce are obviously
not even remotely good sources, but I thought it was interesting that
there was at least some protein in there
Buckwheat 1 cup - cooked 7.6g
Brown rice 1 cup cooked 4.9g
Large Egg boiled 6.5g
Mozzarella cheese 1oz 7.7g
Black Beans 1 cup cooked 22g
Garbanzo Beans 1 cup cooked 20g
Tofu 2.5×2.75×1″ piece 9.4g
Soy Milk 1 cup 7.6g
Almonds 10 nuts 1.9g
Pumpkin Seeds 2 tbsp 5.1g

Black Walnuts 1 Tbsp chopped 1.6g
Broccoli 1 stalk cooked (stalk =1/3 lb) 5.6g
Romaine lettuce 1 cup chopped - .7g
Spinach 1 cup raw 1.8g
Spinach 1 cup cooked 5.4g
Pumpkin 1 cup canned 2.5g
Sweet Potato baked in skin 2.4g
Carob Flour ΒΌ cup 1.6g
Nutritional Yeast 1 tbsp 3.1g
I still need to analyze my protien intake. Being as small as I am,
these numbers probably look a little more significant to me than they
might be to a larger person. I was a little surprised at the low
protein content of nuts, though. The adventure continues!
