Max’s spinach question

Max, that’s a good question! I don’t know. Maybe my spinach recipe is
adapted from an older recipe that relied on a pork product and grease.
The only spinach I knew as a child was the green gelatinous abomination that
comes out of a can. Yeecch!
I forget where I found my recipe, but when I decided to start eating right, I
knew I had to find a way to eat spinach, and this is it!
