wheat questions
Hi all,
I am not going to argue that we Os should be eating wheat. I am feeling
great without it!
What I want to ask and clarify is about the affects of wheat. I know of the
bad stuff that happens when eating white flour products, as it has the
higher glycemic index and jacks the glucose up quickly then plummets it back
down. Info about how crappy white flour is, is abundant and easy to find.
White flour also has near zero nutritional benefits and less fiber. I
thought, though, that whole wheat flour didn’t do this same bad thing to the
glucose level. (I had our family eating whole wheat bread, homemade and also
oatmeal breads with whole wheat flour and thought that was pretty darn good.
The reason I was avoiding store bought bread before I began the ER diet was
because my kids are allergic/sensitive/intolerant to corn, soy and dairy. It
is near impossible to find a store bought bread that doesn’t contain those
ingredients. Nearly all breads now have soybean oil if not soy flour.) Both
their Pedi’s and their ND said that whole wheat products are great and
should be eaten instead of white flour.
Same argument for eating wild rices vs. the refined white rices. Am I wrong?
It seems to me that some people here are putting down ALL forms of wheat
flour for the glucose/insulin reason rather than dividing between the
garbage-y white wheat flour vs. better whole wheat flour.
Also am curious if the same issues with glucose levels apply to spelt
flours, white or whole grain, respectively? I am finding it hard to find
info about spelt and how the body processes spelt. Is the consensus that
spelt is best avoided and we O’s should be using Ezekiel instead? I have
been eating both lately and just started experimenting with making my own
spelt bread. The reason is that I want a more puffy bread once in a while
for a sandwich instead of the dry, woodlike Ezekiel bread.
Also with pasta I have not been able to find a rice pasta that is edible, to
me. I did find Vita Spelt great. Living with an Italian husband pasta dinner
is 1 or 2 nights per week here. I am trying to live as much in alignment
with the whole family as possible, at least in the beginning. The less of an
outcast I feel, the more likely I am to remain compliant with this diet (and
feeling better).
What about the rice breads in the health food store that have no spelt and
no wheat in them? Do those wreak havoc with our systems?
Lastly, it seems that Dadamo doesn’t put down wheat consumption as much as
members of this list, or else would he not tell all blood types to avoid
wheat? Comments on this please? He must not think it is bad for all blood
types as wheat is neutral for some blood types. (Our household has 2 As and
2 Os. One of the Os and one of the As I put into the wheat bread junkie
category so this may be hard to break.)
