Snack and breakfast ideas

Hi! Thought I’d introduce myself and then ask for some ideas.
I turned 40 this year and, as some predicted, my body started “falling
apart” — just weird things, including gum/tongue problems, increased
allergies, sleeping challenges, weight gain, etc… To try to reclaim
my body, I decided that something has to happen and the ER4YT diet
really seemed to make sense. So, I started slowly about a week ago,
just to see how major a lifestyle change this would be… MAJOR! I
didn’t realize that wheat and corn (usually with sugar and often laced
with MSG) had pretty well taken over my diet. Right now I’m aiming for
an initial 90% compliance — focusing on removing wheat, corn, dairy,
MSG, aspartame and then trying to increase the beneficials. I’ve cut
down from 1 cup of coffee in the morning to 1/2 before going “cold
turkey” …
My challenge is what to do for protein snacks/lunch on-the-run and
breakfast (at home).

As far as snacks go, I have successfully been able to make
muffins/pancakes/baked goods (with various non-wheat flours) and trail
mix (pumpkin seeds, pecans, dried fruit) to take along but as far as a
wider range of ideas incorporating more protein, I’m at a loss. All of
the jerky I looked at had MSG in it (or an equivalent) and I’m really
trying to avoid that. Sometimes I’m on-the-go from mid-morning and
until mid-afternoon.
For breakfast, eggs are easy, but a couple eggs a day is too many. This
morning I had homemade pork sausage, with the idea that a choice between
an “avoid” protein and neutral non-proteins for breakfast, pork might be
a better idea but I don’t know that that’s the right trade-off (neither
is optimal, I know)…
Any suggestions?
Thanks! By the way, there is great information in the archives — I’ve
enjoyed searching out the answers to various questions I’ve had.

    For breakfast I have been eating Ezekiel bread, toasted, cinn-raisin flavor,
    2 slices. This is ranked as *highly beneficial* and the bread is actually a
    protein. I also eat a piece of fruit along with it or a beneficial fruit
    juice and also lots of water. I have not been doing animal or egg proteins
    for breakfast on a regular basis.
    I also find that I am not eating any of the Ezekiel bread at other times of
    the day. My lunches have been non-sandwich, usually are a protein on a plate
    with veggies and maybe also fruit.
    The days I eat 2 eggs for breakfast I find I am hungry about 90 minutes
    later (for reasons unknown) so it doesn’t hold me as well as the toast,
    meaning I snack earlier and therefore eat more calories. I am not counting
    calories but I’d like to lose some pounds so…
    You can also buy spelt or sprouted wheat (neutrals)…English muffins,
    bagels, hot dog buns, hamburger rolls, avail. in freezer section of health
    food stores…I keep mine in the freezer then when I want one of those

    things I defrost it individually. Just an idea so that you aren’t feeling
    like you never get to eat a bagel again, or a hamburger on a roll again…
    As someone on this list shared there are multiple sources for rice tortillas
    that can be used for sandwiches. I have not yet figured how to deal with
    lunch on the run which usually means for me, a fast food sandwich of some
    kind or a deli sandwich. I have not yet resorted to bringing my own roll or
    bread with me when I go out!! :) Christine

    I’ve found beef breakfast sausage at my regular grocery store.
    Actually only at some of them - the bigger stores carry it. Just
    beware and check the ingredients on the brand and don’t cook too
    long - just warm through. Otherwise it becomes rock hard.
