New with questions- Beef Jerkey

I’ve had this recipe forever. It’s simple and tasty.
Beef Jerky
Flank Steak
1/2 cup soy sauce (wheat free tamari of course)
1/4 tsp garlic salt
1/4 tsp lemon pepper
Cut all visible fat from meat (normally I eat the fat on a steak but for
jerky you should cut it off). Cut the steak into 1/4 inch strips. Soak in the
sauce for 5-10 minutes. sprinkle with the spices (vary these according to
tase). Bake on a rack over a sheet pan for 10 hours at 175 degrees. Overnight
is
the perfect time.
