Hi, Don!
Thanks for doing all that work. Now we need the Neutrals for all types.
It’s interesting that many celiacs bake with the gums–Arabic and Guar,
which are pan-Avoids. I am one of a number on the Celiac List who cannot
tolerate them. They supposedly give a more gluten-like texture to
gluten-free baked goods.
