Don’t cook fish in foil, the metal releases things when heated that your body
does not want or need.
You can buy parchment paper and use that instead. This is not the same as
waxed paper!!!!! Nowadays, I find parchment paper at the supermarket, in a
roll in the same aisle as foil and saran wrap. Formerly, I had to buy it at
Williams Sonoma. Now it’s at the local store, and very affordable.
Here’s a quick recipe, for any mild, white fish:
Cut a piece of parchment paper, approx 12×18″. Fold in over in half, then
open it up and lay it flat, and brush or spray olive oil on the side facing
up. Take minced carrot, garlic, onion, leek, celery, whatever you have, and
put about 2 TBL. on one half of the oiled side. Place a filet of firm white
fish like bass or halibut, on the vegetables, about 4-5 oz fish. Cover the
fish with another 1-2 TBL. minced veggies. Put a lemon wedge on top. Fold
up the parchment paper, and put in the oven, on a baking sheet, for 10-15

minutes, at 425F. The fish will be delcious, the parchment makes a festive
wrapper, so it’s a great dish for company, and best of all, the parchment
contains the fishy smell, so your house won’t stink from cooking the fish!
