Dianne asked if moose shouldn’t be ok, as it’s so closely related to elk and
deer. That was the point I making about goose. It’s so close to duck, which is
Neutral, yet goose is an avoid.
Someone suggested goose is an avoid because it’s greasy and fatty. I don’t mean
to be too offensive, but it only turns out that way IF YOU DON’T KNOW HOW TO
COOK IT. It does have a layer of fat under the skin, and when rendered, it is
the purest, cleanest fat for cooking, and very light. The birds turn out greasy
becuase people think you need to treat them like turkey, and baste them in their
juices. Well, you can’t do that with goose, because it’s not juices that are
running off, it’s fat. You must use your giant eye-dropper thing to siphon off
the fat every 10-15 minutes and DISCARD IT. Before I knew it was an avoid, it
was one of my favorite dishes. One of the few avoids I truly was sad to let go.
The reason it is an avoid -bear with me - I don’t have my book handy- is because
of some chemical or hormone that is particular to geese (maybe something in
their blood type!), and that element is bad for type “O”.
