farmer cheese
Hi there,
I was wondering if anyone could tell me why “farmer cheese” is a
neutral. It’s actually pretty yummy, but I can’t help thinking I
shouldn’t be eating it because it’s dairy, right? Does anyone know
what’s the deal?

I dont wanna know the “deal”
farmer cheese is GREAT! It taste better than soy cheese. I eat farmer
cheese and rye crisp crackers and a glass of red wine, play some Kenny G and
light some candles!

is a white cheese, and I just asked at the deli section of the
store for it. I am thinking at larger grocery stores will likely carry it.
I highly recommend it

Well,
Let’s see…as far as cheeses go, it’s:
High in water - Usually Very Fresh
Low calorie
Low in Protein
Low Fat
Higher Carb
Everything Dr. D would look for in a cheese for whey and casein
sensitive people! He also doesn’t want us to have many C16 and C18
fatty acids, which cheeses are usually highest in. Remember that
lactose is not the big problem here, as it is fairly low glycemic. I
would imagine it’s optimal amino acid (lysine/arginine) ratio (why it’s
HB for B’s and AB’s) is also part of what makes it neutral for us. I
would stick to sheep, goat, and buffalo’s milk cheeses in general, as
their fatty acid profile and protein composition is more beneficial.

Ricotta?
I don’t think it’s Ricotta. Ricotta is more like cottage cheese. It comes
in a hunk and looks like swiss cheese without the holes.
