I don't think that was it. I cooked them in plain water this time, as
you described, to ensure a neutral environment. So, unless my water is
acidic (I was using non-reactive cookware), I don't think it was
acidity. I think that maybe they were just bad beans.

That's my usual bean cooking method and usually yields yummy, soft
beans. I rarely cook them anymore, but used to almost weekly before
BTD. I have some Adzuki in the pantry, and I think I cooked some
several months ago. I'll try again and let you know my results. I got
mine in the bulk section of Sun Harvest Farms (part of Wild Oats).

so, how? I ask because I soaked mine for several days and then cooked
them for 2+ hours (boil, then simmer), and they are still quite firm.
They grew the normal amount, and some of them even grew sprouts, but
they just seem a bit too hard to be palatable. People think they are
eating under-cooked beans when I know that I cooked them long enough.
Anyone with similar/contrary experiences please speak up.
Munching on my sweet brown rice and Adzuki bean concoction, even if the
beans ARE a bit firm,

My HFS is small and doesn't carry many bulk items. I did look for the
beans there last week.
