I thought that the bad guy in wheat is gluten and most of it is in the seed
pod (husk). Sprouting leaves the seed pod (husk) behind. Of course, I could
be wrong.

Sprouting “digests” the gluten into basic amino acids, so sprouted
grains are gluten-free.
