Pineapple juice marinade and body temp
I marinated some short ribs in tamari and pineapple juice last night
(short marinade, ~1 h), then cooked them in the marinade. They were
yummy with a nice glaze. I surmise that the betain (?) in the
pineapple juice must break down the meat tissue nicely. Give it a try!
On the body temp issue, when I donate blood, my temp is usually
within one degree of “normal”, usually on the low side. However, I
usually feel warm. Too much heat in the winter kills me, though I
don’t like being real cold, either. I sweat easily, even in cold
weather. Though it rarely gets below the teen here, and that’s pretty
rare itself. I sweat so much in the summer when I go outside (90s-
100). My heritage is mostly British Isles (Welsh, Irish, Scottish,
English). Most of the family, except my dad, runs on the warm side. I
like to sleep with the window cracked in the winter, with my down
comforter! Green tea makes me sweat, as do most hot drinks. Weird. I
looked and I can actually see a few blue veins in the neck/chest
area, and underneat my upper arms. The only places without a goldish
tint to skin, and freckles. Whatever. I’ll just roll my tongue and
enjoy life!

Yes, beef short ribs. I much prefer the boneless beef ribs. The short
ribs had little chips of bone I kept discovering while eating. Ugh.
But still very yummy. Nice fat.
I **always** wear a hat outside and drink plenty of water. People
don’t think about it, like you said. Even when I’m sitting around in
the water I wear a hat. Only remove it to actually swim. It gets
pretty humid down here in the summer, so it’s not a “dry” heat. That
would be in west Texas.

try it! I can’t find beef ribs anywhere - I am assuming they are
beef ?
I had a heat stroke about 12 years ago when we were in Texas. It was
over 100 degrees and being a northerner I never gave it a thought. We
were at a festival and I spent the whole day in direct sun without a
hat. Since then I cannot tolerate anything above 90.

Yes, that’s what I was talking about! The marinade with the raw juice
would tenderize. I just left it in the pan when cooking for the heck
of it. I knew about papain being the digestive enzyme from papaya,
just couldn’t remember the name for the enzyme from pineapple.

Well, you couldn’t be talking about bromelain, which is the active
protein-digesting (protease) enzyme in pineapples, becuase if that
pineapple juice was cooked all the enzymes are destroyed.

don’t think about it, like you said. Even when I’m sitting around in
the water I wear a hat. Only remove it to actually swim. It gets
pretty humid down here in the summer, so it’s not a “dry” heat. That

I also started wearing a hat here when it gets hot. I don’t know if we were in
west Texas- It was at the Chili Festival in Kerrville I don’t remember what
part of the state that is in. We were there for a month so we were all over the
State. We went to San Antonio just to try “Big Ern’s” Puffy Taco’s we read in
“Texas” magazine that were the best in the state. I remember it took us 2 days
to find the street and his restaurant, but they were really good. He really was
big too. Have you ever heard of these ? We also stayed in Conroe for awhile I
think that is in eastern Texas. I think the people in Texas are the friendliest
we met anywhere.
As for Taco’s I guess they are completely out of the question. They are one of
my favorite’s. I am craving corn already. I checked the mayo and it has corn
syrup..it seems like almost everything I like has it in.

Kerrville is west of San Antonio, but not considered “west Texas”.
That would be way out by El Paso. My folks live in San Antonio, and I
will be there this weekend. I’ll see if I can find Big Ern’s. Never
heard of him, but there are lots of great eateries down here. Conroe
is by Houston, so considered “east Texas”, though south, too. I live
in Austin, south central. Mexican food was a main-stay with my former
veggie self. Now I just get the fajitas and eat the meat and veggies.
Let someone else have the cheese, tortillas, sour cream and
guacamole! Yikes!

Whole Foods brand regular canola mayo or Spectrum regular canola
mayonnaise are good substitutes. You can always make your own like I
do. Maybe Axel will repost his recipe.
