Well, I’ve finally opened up that package of frozen beef sweetbreads. Grass-fed
sweetbreads to be exact. Sweetbreads are the thymus and pancreas glands (other
glands are gonads, organs that have glandular functions are liver and I believe
the kideys). Then there’s the pineal and pituitary, but those are in that big
fatty mass known as the brain.
I am finally getting around to eating my sweetbreads because I now have a book
which explains how to prepare them for cooking and eating, kidneys, brains,
tripe, sweetbreads, even liver, these organs should be prepared properly to be
eaten safely. Not like a slab of muscle. You gotta work for the extra nutrients.
So, after soaking in acidulated water for over two hours I boiled them in
salinated water, picked and cleaned them, now I’ve left them to be pressed on a
baking pan with a heavy weight on top in the bottom of the refrigerator
overnight. Tomorrow morning I hope I have the courage… Mmmm. Pancreas time!
Instead of muffins, meat muffins. Instead of pancakes, pancreas! Yay! What’s
funny are those digestive enzyme pills, the kind with beef glandulars, I am

Can you please tell me where you buy your egg white? This is a protein
powder, right? Is it organic? Is it a plain powder or mixed with stuff?
If plain, how do you prepare it?

Parsnips, too

Oh yeah, I bought some parsnips, too. They look like white carrots!
Anyway, I read to put them with a roast or soup in the last hour of
cooking. Sound right? Will they also saute?
I took my new O Food List book with me shopping this week. Made
myself get out of the “same old food” rut. <sigh

Collard greens - how to cook

I bought some collard greens this week. I hear they are a bit tougher
than spinach (my favorite “green” so far). Any suggestions? I was
going to rinse, pat dry, then chop and saute in meat drippings. I
think I’ve read that somewhere on this list. Will they look like
cooked spinach when they’re done?
I had always heard they were bitter, so never tried them before. I
love spinach, which is so yummy and not bitter.

brown rice low carb crackers

Another cracker that I enjoy on occasion is Hol-Grain Crackers. The
ingredients on the one I buy is brown rice, salt, onion and garlic (last
three ingredients are barely noticable) and has 13 carbs for 7 crackers
(they are thin). Also available is plain brown rice and salt or no salt. I
buy them at the health food store.

For those of us who can’t eschew grains totally, “Kavli Crispy Thin”
crackers are great. Three crackers are only 13g carb. Ingredients:
whole rye flour, water and salt. They are great with tuna & mayo. I
know, bad food combining, but yummy!
