want to eat beef but afraid, any suggestions?

I am so glad to have found this list and am learning so much from all of
you, thanks!
I have not eaten beef and most other meats for 24 years. About 10 years ago
I switched from being an ovo-lacto vegetarian, adding in chicken breast,
turkey breast and seafood.
I have been wanting to eat beef for a long time but have some kind of
irrational fear that it will make me sick or that I will not be able to
digest it. I now know it is irrational because I have seen some posts from
former strict vegetarians who now eat and enjoy beef.
I am looking for a source of grass fed beef, having read that it is the best
kind.
Can anyone offer any suggestions for overcoming this fear and eating beef?
Also, is there a certain cut or easy preparation that would be good to try
first? I am following the current beef thread with interest as I have no
idea how to buy or prepare beef
Now that I am following the LR4YT eating plan, I would like to add this
beneficial protein to my diet. I would like to feel strong and energetic
again.

I just started eating red meat 3 weeks ago (after 22+ years). I first
made some chili, to disguise the taste, with grass fed bison. Then
the chuck roast in a crock pot with lots of garlic, spices, sweet
potatoes and sliced onions. Yum. Then the grilled NY strip. Really
yum. My friends can’t believe their eyes!
Just go for it!

I needed this encouragement
here that carries it. If I don’t find anything closer, I will take a cooler
and head down there to buy some.

I wasn’t sure how to ease myself into it and your suggestions are excellent!
Will you please share your chili recipe? There is a buffalo farmer (is that
the same as bison?) not far away from me that I heard raises excellent meat.

I based mine on the ingredients in Wicke Fowler’s 2-Alarm Chili. It
was actually 5-Alarm, very H-O-T! I’ll post it when I get home.
I have another chuck roast (for the crock pot, some Mahi Mahi and
boneless ribs for the rest of the week. Woohoo! Just ate my first
hard boiled (organic) egg in years as a mid-morning snack. Yum! I got
a bit yawny 30-45 minutes later. Normal?
About my name… first initial is “E”, middle name is “Long”. It’s a
family name and I’ve used it my entire life. “Powell” is my last
name, so it’s not a weird affectation or anything. I guess. <g
yeah, and I’m female! I get “Mr Powell” or “Mr Long” all the time
electronically. <heehee
