Is it ok to eat the same proteins/meat the whole week or should we vary
daily? It sounds like a good easy idea with the sliced roast for lunch, but
worry that it might not give enough balance? I can personally live on
Broccoli and roast beef.

My routine has become that I usually have a couple of hardboiled eggs or egg
salad for breakfast. I roast a bottom round or sirloin roast, generally
stuffed with garlic on Sunday/Wednesday evening. I usually get a 2.5 pound
roast and that lasts me about 3 days. I let it cool and put it in the
refrigerator.

I have a friend whose voice I hear in my head saying the same thing.
“You need variety for nutrition!” I try to add a little fish or
chicken for dinner and vary my veggies. I also add a little V8 juice
here and there to get more nutrients. He probably doesn’t even know
he’s in my head! Even with that variety, there is no guarantee, so I
ensure that I take my vitamins - especially because I have cut out
things like dairy and grains. It’s virtually impossible to get
everything you need.
I read an interesting article in READERS DIGEST this month; little
things we do to protect ourselves in other ways - like wearing
sunscreen - can cause us to not get enough vitamins. It’s almost a
loosing battle. Recommended vitamins for almost everyone was Vitamin
E, Vitamin D and Folic Acid.
