Barley casserole recipe
In looking through recipe books I came across this one for a barley
casserole which is very good in place of rice or sweet potatoes for a
change. I have not looked at the latest list to see where barley is but as
there is a recipe for black-eyed peas and barley salad that is HB for O’s
I’m assuming……………..
BARLEY CASSEROLE
1 bunch chopped green onion ( I used a leek)
1 cup chopped celery
2 tablespoons butter ( I used olive oil)
1 cup pearl barley
3 cups beef broth
10 oz. French onion soup
Sauté the green onions and celery in the butter for 5 minutes. Stir in the
barley and coat it well with the pan juices.
In the casserole mix the sautéed vegetables, barley, broth and soup
together. Stir well.
Bake covered in a preheated 350 degree oven for 45 - 50 minutes. Stir
several times while cooking.
This recipe freezes well.

Which recipe are you referring to? The black eyed pea and barley salad? I
