Here’s a peach ice cream recipe that doesn’t use heavy cream…and uses reg. soy
millk and tofu in place of heavy cream (which is just VERY thick cream)… not
quite
sure how it tastes got it from Da’Damo’s board.
Marinate together in the fridge for 1 hr:
-8 medium peaches, peeled & chopped (About 1 qt.)
-the juice of 2 lemons
-1 cup of sugar
Combine with:
-3 cups soymilk
-1 1/2 lbs. tofu
1 1/4 cups sugar
4 Tbsp. vanilla
1/2 tsp. salt
Blend in a blender in 4 equal parts until smooth & creamy.
Freeze in a home hand-operated or electric ice cream maker & serve.
Per 1/2 cup Serving: Calories: 137, Protein: 3 gm., Fat: 2 gm., Carbs: 18 gm.
