Pizza Crust
I found this in the recipe files on dadamo.com. I haven’t tried it yet. I
wonder if buckwheat or brown rice flour will do just as well?
Spelt Pizza Crust
1 1/4 cups warm water
1 packet quick rising yeast (2tsp)
2 Tbsp. honey
2 Tbsp. molasses
1/2 tsp salt
5 cups spelt (sub. buckwheat?) flour
Dissolve yeast in warm water that has the honey and molasses mixed in it.
Add flour and salt. Mix well and knead for about 5 minutes. Shape as desired
(pizza crust, dinner rolls, sweet rolls, breadsticks, etc) Cover with clean
cloth and let rise for about 30 minutes. Bake at 350* for about 30 minutes.
Cooking time will vary depending on size and shape of your loaf. FOR PIZZA:
remove from oven after 20 minutes, quickly add sauce, cheese, toppings and
return to oven for additional 10 minutes.

Tracy,, do you know the brand of the spelt pizza crust from Whole Foods?
thanks! Leslie ps. the spelt tortillas are pretty good from Rudi’s Bakery…
but they have a tendency to stick together a bit… and sometimes crumbly
but taste good!

The ezekiel tortillas from Trader Joe’s are very good and do not fall apart.
They are sprouted wheat which is ok.
