I have used olive oil exclusively for years. I have used it many times in
cakes, muffins, etc. before I started the ER4YT. Believe it or not olive oil
does not affect the taste at all. However for those of you who prefer not to
try it, use applesauce instead of oil in the cake/muffin mix. Applesauce makes
cakes/muffins light, fluffy and moist. I have not tried this trick in cookies
though.
