Fiber
Hi, all. I’ve just been ER for a little over a week. Before this, I would
have a bran muffin for breakfast every morning (made with whole wheat
flour). Now, I’ve substituted pumpkin muffins made with brown rice flour,
but I’m concerned about not getting enough fiber. That bran muffin was a
major fiber source for me. I have been feeling sluggish since the pumpkin
muffins (instead of energetic as I’d hoped to feel). I know I need to eat
more veggies and get fiber that way, but does anyone know of something high
fiber that I can add to my muffins? It would really help.

Nancy, I add flaxmeal to my muffins,for the fiber and the lignans.(very
nutritious)You can get it at most health food stores. sbel

Nancy,Yes that is the same as ground flaxseeds,you could grind your own I
guess.I use about 1/4 cup in my muffins,but you could use as little as2
tablespoons and still benifit but I say the more the better.I also use it
in buckwheat pancakes. Hope you like it! sbel
