spinach ideas

A couple of weeks ago someone mentioned they’d like some more ideas of
what to do with spinach. I have a couple to share…
This first one I got from a baby shower I attended a couple of months
ago. It was a spinach & pear & walnut & blue cheese salad. I know the
blue cheese is an avoid, but I had some anyway. The salad was delicious!
I’ve made a variation of it a couple of times since then; since I don’t
know what dressing she used. And she’d candied the walnuts which I
haven’t tried. She said she used just butter & brown sugar to sugar
them– and I may try that sometime. But I’ve made it with some sliced
pear, spinach & sprinkle some walnuts on it then drizzle with a little
olive oil & lemon juice. Pretty yummy! During the time of year you (I)
don’t really want to have cold salad, you could even have it warmed up.
Just warm up the pears in a pan, then add the spinach for just 1-2
minutes to warm it a little. Since spinach starts to cook so quickly you
don’t want to warm it too long (which I did… it was still good!). Then

put into your bowl and add walnuts & your dressing.
The second idea is a meal I made last weekend; I had some bagged spinach
that was close to going bad & I’d decided to make some stuffed red
peppers. So I just chopped the spinach in my little food processer and
added it to the other parts of the stuffing! Other ingredients were:
leeks, garlic, rice and lamb. I stuffed the peppers after cutting in
1/2, and layed them face up in the baking pan. That way I could
over-stuff them. It was my first time at that dish, and it came out
pretty good! Any other good ideas out there??
