sorbet, stuffing, fritters, peaches??

now–hypothyroid as I am I probably shouldn’t have anything cold, never mind
frozen. I see an ice cream maker in my future, right up there next to the
breadmaker.
Ain’t that the truth! I love ice cream and miss it frequently. I did find one
frozen sorbet that doesn’t have corn syrup or dairy. It’s Howler Rainforest
Sorbet, Mango flavored. The ingredients are mango puree, water, organic cane
sugar, fruit pectin and guar gum. I have this occasionally and am hoping that
since guar gum isn’t a lectin itself and only enhances lectin activity that it
won’t matter as long as I only eat it when I haven’t gotten any other damaging
lectins at the same time. Unfortunately pectin is an unknown according to my
list. (which is a bit old.) I’ll be a little depressed to learn that pectin
has become a lectin avoid.
Squash stuffing? Rice with feta cheese? Mozzarella with walnuts, raisins,
ezekial bread cubes? Turkey sausage with rice, cheese, crumbs? Chopped prunes
with feta and rice? Chopped broccoli and walnuts with farmers cheese? Chopped
red onions, walnuts, rice and soy yogurt . . .? I went shopping yesterday and
there were TWO kinds of yams and one kind of sweet potato! I bought the sweet
potatoes since I know they are beneficial. I’m planning on making a pot of soup
with them and onions, some squash and what ever. Then eating it with chopped
beet greens put into the bowl after heating. I love eating greens this way.
The beets are going into a vegetable fritter recipe that I got out of the CR4YT
book. It’s basically fine shredded, HARD vegetables, like beets, carrots,
turnips, leeks, parsnips, and onions. (which aren’t that hard but necessary for
yummy taste.) Then you mix up the veggies and add ezekial crumbs, eggs, and
some rice flour as needed to make patties. Fry in a little olive oil to golden
brown. These are delicious!! (I add a bunch of beneficial seasonings and
garlic too.) They are pretty good leftover as well so I make a big batch and
freeze half of it. I use a cusinart to prep the veggies. It turns hours of
grating into a couple minutes of slicing.

I didn’t know that, thanks for sharing! Eases my mind about the times I eat
cooked mushrooms and don’t even know it. I use crimini mushrooms in my salads
occasionally but I have been missing shitake mushrooms. I can’t wait to have
some again.
Peaches suppress the thyroid? That’s one I entirely missed. They are a neutral
on my lists. ????
